Truffle omelette

Yesterday G returned from playing boule with a very precious present. Passed secretly in their normal handshake of greeting was a small packet of tinfoil containing four slices of black truffle from Paolo! Paolo is a very generous giver of recipes – we have enjoyed lots of seasonal ideas from him in the past. And he recommended the truffle to be used in an omelette, to be lightly cooked, the truffle and a little salt sprinked on, folded and finished off under the grill.

I can report that it was superb with a green salad and we toasted Paulo with a glass of Sancerre. Santé! What could be nicer on a rainy Sunday?
